This Greek pasta salad is a delicious and healthy option for those short on time. You can make a large serving and save the left overs for more meals. It tastes great hot or cold!
Ingredients:
Cucumber
Reduced Feta Cheese
Red onion
pitted kalamata olives
roma tomatoes
pepper
grilled or baked chicken strips
pasta
a bit of olive oil
basalmic vinegar & pepper, to taste
Chop the cucumber, onion, and tomato and mix together.
Next add the chicken, 1/4 cup crumbled feta and several olives.
Mix ingredients together.
Note: You can save time by buying pre-cooked chicken strips like Tyson's Grilled & Ready
Then add chopped fresh ingredients to your choice of pasta. I used bowtie.
Stir in a teaspoon or two of olive oil, along with the basalmic vinegar and pepper to taste.
Stir the ingredients until they are evenly mixed then store in the fridge to chill.
